My work is all one-offs, handmade, so my stock number is always one. However, a customer who come to my shop is shown – 1 + .
If the customer tries to select more than 1, the site comes up with the message "Unfortunately the item requested only has 1 item(s) left in stock. Please adjust the quantity and try again"
This wrongly gives the impression that the item is not a one-off, that there might have been more stock available, or could be in the future.
So, I would like to default to not showing any option other than quantity of one product, or to change the message to a more pertinent "This is a one-off handmade product, only one is ever available"
Can that be done somehow?

I just found in editing an item (in the template for items) that I can turn off "Quantity Selector". I think that may be exactly what I was looking for. Hope it may help others.
As it's the template I'm editing it seems to apply to all my products I believe, that's okay for me as all my products are handmade one-offs.

I created an item with a stock of one and removed the low stock indicator so that when the item is added to the basket the customer will see the following:
I did a description mentioning that it's one of a kind, but due to the location of the description box, maybe you could add it to the item title instead.
You could also consider toggling off 'Display out of stock items on site', this would mitigate customers seeing unavailable items.
