Can I adjust the total of a customer's online order based on the actual weight of a product?

I operate a seafood market and would like to offer different types of seafood to customers through my online store. For instance, they can order a pound of fresh salmon online and pick it up in the store. However, when I weigh their salmon fillet, it may or may not weigh up to exactly one pound. I'd prefer to not cut small pieces of each fillet to make it exactly one pound, since those small bits will go to waste. Is there a way I can adjust the total cost of the salmon after the purchase, based on the actual weight of the fillet they ordered?

As far as I'm aware, there is no way to increase the total after the transaction is marked as complete. I would recommend setting up a pre-authorization (charging the customer a little more than needed) and then refunding the amount that was not used.
