What's the point of Unit options ("Sold By") for an item?

One would think that if you can sell an item by "Per Item" or by the "Dozen" then you would be able to add both price points to an item. For example, if I am selling donuts, then I may want to sell them for $2 each or $10 for a dozen. So if I have a Donut item, I should be able to create a variation with a per-item price, and also the same variation but with a per dozen price. But it appears this isn't possible for some reason. So then why did Square even bother to create a data field for Unit (with Per Item, Per Dozen, Per Liter, etc)? If I have to create specific variations of the Item to distinguish between a single unit of that item versus a dozen of that item, then there's no point in having a Unit designation since the "dozen" is already specified in the variation. In fact, it only creates redundancy confusion: if I sell a dozen of an item "Per Dozen", have I sold 12 or 144 of those items?

Furthermore, since a "Per Item" variation is distinct from a "Per Dozen" variation, then they are treated as two separate stock items. 🙄😒 That may make sense for a retailer selling individually packaged items vs items pre-packaged by the dozen (like eggs), but it makes no sense for a retailer selling loose items in various quantities (like the donut example). Ideally, I should be able to set a price "Per Item" that would decrease stock by 1, and a second price "Per Dozen" that would decrease the stock by 12.

And to add insult to injury, designating that an item is sold by the dozen changes the POS behavior during the check-out process: instead of defaulting to 1 unit (in this case, one dozen) with the option for the cashier to increase the number of units sold, it defaults to blank. And the transaction display is goofy too: it displays the unit price first ($20/dozen) then the quantity sold, which is not how people naturally think or speak. And since I have to create a specific variation for a sale by the dozen (to distinguish it in Square Register from a sale by the per item), then that also shows up on the display to make it even more convoluted.
