You could try removing that person from your customer directory, although I'm not 100% that will do it. and I don't think you can change the email from your side...if the customer used their credit card, even if they were not a previous customer of yours (but used a Square payment in the past), Square remembers their email. I think the buyer would have to click on their emailed receipt and change their subscription/preferences themselves.
