I have everything turned on (I think). But it does say "The email collection screen only appears if a customer has not signed up for an email receipt. If you have an active Loyalty program, email collection screens may not appear. Learn more in the Support Center." We have a loyalty program but I need to collect email addresses for email marketing.
You will also need to turn these on on each device within the Square App you are using. So since I use Square Stands I would have to enable these on my Square Stands running Apple software by Starting my Square App then going to More Settings etc which is explained in the links below.

We are using Square for Restaurants. I can't find anything in Square for Restaurants that deals with customers/email collection. We do have the "Collect Email Addresses" turned on in Loyalty. But we really need it at checkout. The best time to request a customer's email is at checkout, face to face when we can explain the benefits.
At your POS where you ring up the sale, Bottom right there are 3 lines with 'More'.... Press (Tap) there
Then press Settings
Then Customers
Then Turn on Email Collection.
This will have email collection on for that POS station. Then repeat at all other POS stations.
As for why Square would send a Text to ask for an email address might be to help speed up service to the next customer. Typing in an email address and all the other information can take a minute or two and for some people they are impatient.

You are welcome for my help but may I ask what Device are you using to ring up sales with your Square software?
On my Android Phone and Tablet I have the More, and also on my Ipads in my Stands I have the More. Are you using a register or Terminal? Those I do not have. Can you post a Screen Shot or picture where you are looking for the More? Here are pictures from my Cell and Ipad:

I have not seen a Square for Restaurants screen but the buttons on the bottom to access settings should be similar.
Why does the customer need to receive a text asking for their email when they sign up for Loyalty with their phone number? It would be great to capture phone number and email address when they sign up for Loyalty.
