REALLY need a daily inventory setup and tracker.

I need a way to make items unavailable when sold out - FOR THAT DAY.  Now, if I make an item "unavailable" it is blocked form ordering forever, until I make it available again.  Meaning - If I am sold out of an item (from pre-orders) for this Saturday... I still want customers to be able to order for this Friday (or any other day.)  Make sense?  Anybody have this issue?

Definitely makes sense what you're trying to do. Hopefully Sellers can chime in with their workarounds since there's no such feature available using Square.
