If I hadn’t set up my savings using square banking,  for the sales tax. Where does the collected sales tax money go?

You would still collect the money from Sales tax collected. This amount is simply deposited into your standard checking account with square our with your automatic transfers. Square does have tax as a line item on reports, so you know how much to remit to your state.
