printing orders before customer pays

I use square restaurant for my small BBQ joint and just upgraded to square stand with cash drawer and printer. We take a lot of phone orders early in the day because we sell out often. The problem I am having is to print out order ticket before customer pays. How do I set it up so it will do an open ticket and print order

I must be an idiot because i still cant find a way for it to work in square restaurant on square pos it works as described but why not square for restaurant. This is getting very frustrating for me and the waitstaff we are still having to write out tickets for all our call in orders. I have contacted square but they cant help me but they have taken my number to pass it on to the restaurant team but that has been 2 weeks ago. Frustrating....

If you are using Square for Restaurants, the settings to enable Open Tickets is in your Dashboard:

Devices > Select Device > Toggle on Open Tickets
