Is there a way to set a certain timeframe on when’s the earliest a client can book an appointment? Say I step out and need to grab some more products and someone books in 15min when I’m 40min away. Is there a way to change this?

You should be able to change/edit your availability to block off the time. I'm not sure if there is an easier way of doing so "on the fly".
But from the Dashboard head to Appointments > Calendar then Edit Availability. You will see the (+) symbol next to the time ( see screenshot). You can adjust your hours to block out the time that is needed for a certain day of the week.
