Tax Exempt Customers / Remove Tax?

We have some tax exempt customers, is there a way to enter the number on their tax exempt ID at the time of sale so that the tax is not collected by us?

You can manually remove the tax from sales by tapping on the tax line in your "tape" on the right side of the screen.

As for recording the tax exempt numbers, Square doesn't have a way to do that natively, and you don't want to use the Notes section of the ticket because that doesn't print on anything. I would recommend adding the exempt number as a note to an item sold on the ticket. If you have a lot of tax exempt clientele you may want to consider making a Tax Exempt item and using that item's note field to enter the number.
