How can I edit the information a customer enters to schedule an appointment. My business requires an address for estimates. Currently “appointments” only asks for name-email-phone number

Definitely! Go into the Appointment Settings on your Dashboard to change this feature.
Settings > Calendar & Booking > Change the setting to "Where do you accept appointments" to Customer's Location.
