@Briche1 In your online dashboard and even on the tablet, you can hit the three bars at the top or click on "All Day" and set up a custom reporting hours where you can specify the time frame for virtually any report square offers.
I have a custom report for "Breakfast" that is from 7am - 10:30 am so I can quickly see what was done on the AM part of a shift at a store without having to custom select it each time.
