Is it possible to create a recurring invoice that features an initial payment that is a different amount than the remaining payments? If so, how?

With Recurring Invoices, you can make edits to the initial price of the sale. Sounds like you want to create a Recurring Invoice with an initial rate and then update this as your customer pays, is that correct?
To edit a Recurring Invoice head over to your Square Dashboard > Invoices > Recurring > Select the series you want to edit > Click on the three horizontal dots on the right corner > Edit. You can also refer to this article with more details.

Not exactly. We are trying to allow a customer to pay a large invoice over time. they pay 30% upfront and then the remaining 70% in 12 equal installments. So, the first payment is larger than each of the remaining 12.
@Slingshot deposits are not an option with recurring invoices. Best bet is to create the invoice with the deposit requested, then break the remaining balance up in milestones. More here.
