When I'm setting a stock for our prepared baked goods will it still allow customers to buy over that amount or will it give them a heads up that their purchase exceeds current stock?
I just don't want to get stuck once we reopen for normal business with orders that can't be filled because of bake time, etc if we urge our customers to order online.

Is your question related to Square's Online Store? If so then the latter applies - when an item runs out, your customer will either see 'Sold Out' or 'Out of Stock' which prevents them from ordering it 🙂
