Hi, I’ve just started using square for restaurants. The other day, we were low on an item, so put a count on it, it then didn’t restock the next day as it was supposed to. I couldn’t see how to make it available again.
Any help would be much appreciated.

You should be able to restock your items directly from your Item Library in the Square Dashboard > select item > receive stock.
You can learn more about making items as unavailable/available here.
