This is for a CSA (Community Sustained Agriculture) for the fall. Customers can purchase until August 31 but they won't pick up at the farmers market until September 1. Right now, I have to go in every week and change the lead time but it's not always correct. If I could just set a date, then that would fix the issue permanently.

At this time, stock replenishing to automatically update at a certain time or date would be considered a Feature Request. Although its not ideal, the best workaround here would be to label your items with specific information about when that item is set to potentially be back in stock. This can be done by editing the item description.
