If you are using Square Online, you can navigate to the Square Online section > Items > Coupons and then edit the coupon to exclude certain products. ( see screen shot)
If you are referring to offline discounts, you can do the same by navigating to Items & Orders > Items > Discounts and adding rules as you see fit.
