I don't want to give full rights to my manager but need them to be able to add items and details. Is the only way for them to add items is by being an administrator?

Rather than add someone as an administrator (this is a pre set employee role that gives access to everything), you can create your own custom role and chose which permissions they have access to and where (eg on the dashboard or the app).
