I went to square on my phone, thought I downloaded it, but all it has is a "square dashboard"

How do I delete the "square dashboard" and install the regular square so I can use it ?

I just want to take credit cards at work.

Square register is the app you want to download.  Sounds like you downloaded square dashboard which is for reviewing sales information.
