I like the old point of sale screen

I'm a bit of a conservative and I don't like unexpected change how do I get the old point of sale board back.not all changes for the better.!

I believe you can still do that for now - for example, on my iPad:  From the main checkout screen, you can touch "More" at he bottom, on the next screen, touch "Settings", under "Checkout", touch "Revert to previous experience".
