How to un-categorize items but not lose them?

I need to expand my category items instead of having an appetizer button and an entree button

Unless you fully delete the item from your item library, you will always have access to the item even if it's not in a category. Just watch out with reporting: you'll see a lot more uncategorized sales which are pretty much impossible to track over time.

You can always keep your current items and add items to your Appetizer and Entree categories. That way you don't have any weird sales you can't track.
