I have a Bakery and we are going to be closed for a week. I am looking to see how I can edit our online store to reflect that so people can't place pre-orders for that specific week?

For the week you will be closed, you can disable online order by going to Settings > Checkout within the Square Online Store dashboard and disabling the "accept online orders" option. If you want people to stop placing orders before the actual week, you can disable it sooner.
As for notifying customers, you could add a popup or banner to let them know that they won't be able to order between certain dates.
