My customers order says: shipping 1 business day.....it shouldn't say that...where can I go change that, I've checked overview on the dashboard looking for shipping and its not there...thanks if anyone can help me please.

Do you have the Shipping 1 Business day set up as a "Shipping Rule"?
If you go to your Online Store Dashboard > Fulfillment > Shipping > Edit (in blue, under Destination Regions & Rates), you can check the rules you have set up there.
