Business Partner previously used the Square for another business venture. Want to delete all information from that business and have a clean slate for our new business. Would also like to change the email address affiliated with it presently to our new business email. Please Help. TIA

To my understanding, it sounds like you are trying to use a Square account you already have open, with a new business. Is that correct?
If so, I recommend creating and opening a new Square account with the desired email address. This will minimize any issues with mixing any reports between the previous and current businesses.
Also, if you are looking to use the Square hardware you currently have with another account, all you would have to do is log in with a different account. There is no information or data stored on our hardware whatsoever.
