The help info/answers/guide on Square aren't matching what happens during checkout.
1. I don't have my phone number on any location or invoice. However, it's included on the email invoice that I can't change. See screenshots below.
2. I have "require customer email (at checkout)" set to optional, however, it's required by Square during checkout anyway.
I had a friend buy an item so that I could be certain what customers see when they checkout, what their email invoice shows, what their bank shows, etc.
The only other place I can find my number is:
Online - settings - general - phone number
I can't save the form without adding a phone number there. I guess this is where the email receipt is pulling info from?
I don't want my number being given out. I am hard of hearing and I'm only one person. I don't use voice calling. Just email/text.

It looks like you've done some digging into the settings of your receipts and invoices to get this removed.
One other place I would suggest removing your phone number would be under Account & Settings > Business > Locations > Click to Edit > Delete Phone Number > Save.
Please let me know if this still doesn't do the trick for you.
