How do I Change custom amount settings

When I signed up I chose the custom amount setting, but in the future I want to charge by item (give itemized receipt and keeps records of items sold etc). How do I change the setting from custom amount to itemized?

@VanKalkerFarms Thanks for your response. I know how to add items, but when I go to checkout, my only option is to enter an amount. I chose this option from the beginning. Now I can't change it.  Maybe if I had chosen the itemized checkout it would have given me the option to enter an amount as well, but as of now, entering an amount is the only option given.
