Hello @DLehm !

This is definitely doable.

For in-person Point of Sale:  Tap More -> Settings -> Checkout -> Tipping. You can change default values here.

For your Online Store: Dashboard -> Online -> Settings -> Checkout. Scroll waaaay down to the tipping section then click the Edit Tips button.
