How can I add tips to an invoice that is paid by check?

We try make these with one item call Tips, but does not work , because when make a report of sales to give to our accounting these tips are included in the sales and we need paid taxes for these tips.
Please could you help? How we can process these transaccion. We have a lot transaccion that are paid in check .

If you are recording checks or cash with a tip you can use the "virtual terminal". 

From the dashboard click Virtual Terminal>Quick Charge.  Input the amount and add the tip given. 

Scroll down to the Payment section and toggle the Record Cash or Record Other Payment option should do the trick for you.
