I've looked under every setting I can find: Customers, Customer Notifications, Email Communications, Settings, etc and cannot find where to turn off the option for receiving a text message every time someone books, cancels or reschedules an appointment.
This should be simple but it's really frustrating.
HI, not sure if they may help. I do not use Appointments so I can not see where the Communications link goes. Scroll down to Manage Appointment Communications.

HI Thank you - that section deals with communications to clients as opposed to the service provider.
However, I did end up finding the setting I needed under "Staff" (I am the only practitioner in my business, so I am the only "staff".
There is a section under each staff member for a phone number and/or email address that Square can send automatic notifications of client scheduling activity.
