I added discounts so I can attach them to a customers invoice, however, I do not want my customer to be able to add discounts upon booking. Is there a way to hide the discounts - or only make them viewable/accessible by me?

Did you add the discount through your Online Store or on your Dashboard?
If you're using discounts from your Dashboard, check out this Support Article for more info on managing them.
