Is it possible to turn OFF the low stock alerts at checkout? Often, I don't enter items into inventory until days or 1-2 weeks after we've received them. So the system might show low or negative stock, even though we physically have plenty of the item. During checkout, Square notifies us each time an item is low/oos, and asks 'are you sure' you want to add it to the cart. It slows us down, it's unnecessary, and it's pretty annoying.

Thank you for providing feedback. And how this feature is affecting your workflow. At this time there is not a way to disable low stock alert from checkout.
I would be frustrated too if that alert kept coming up. I would encourage you to submit a Feature Request here. This will help our product team get visibility and track other Sellers’ interest in your request.
