I'm not exactly sure of what you are asking.
If you are asking if you can charge someone $40 and use their gift card that already has $50 in it then yes you can. They will have $10 left on their gift card. And the same is true if the spend $60, you can swipe a $50 gift card and they can simply add $10 cash or other credit card to finish paying.
