I work for a non profit thrift store and we have raised money through $1 donations so that we can give gift cards to those in need in our community. Is there a way that I can load credit onto a gift card without a return transaction?
First, you need to have a 100% discount created. https://squareup.com/help/us/en/article/3955-create-and-manage-discounts
Now you can load a gift card for whatever value you want and then apply a 100% discount to the transaction. It will load the gift card but be a $0 transaction.

Oh my gosh thank you! Best answer yet!
So when I apply the 100% discount to the gift card, it is telling me (when I press the CHARGE button) that there needs to be at least $1 loaded on the card. Is there a way around that? I want to give a $25 gift card as a donation/marketing and it will not allow me to do it without a $1 charge. IDEAS?
Ah, I see. That's only if you're charging a card to load the gift card. You should see the option to record $0.00 payment after hitting charge. I just this tested on my demo account.
Alternatively, you can record the payment as 'other payment types' after applying the discount.
