When I was setting up my account, I had an option to add a email that would receive carbon copies (CC) of transaction emails. I didn't add it then, but I would like to add it now. How can I do that?

You're only able to add one email address per Square account.
The email address that you have tied to the Square account is the same email address that email notifications are sent to.
If you'd like to change that email address, you can do so from your Square Dashboard, but you're unable to add more than one email address.
Is this still not an option in 2021? Hopefully this is now available. We just switched from SquareSpace and were led to believe that you offered all of the same options.
