Am I able to set up the Square fee along side the sales tax in my transaction if so how can I do it?
I think you are asking about passing the processing fee along to customers. I think the best practice is to just price your services accordingly to the "cost of doing business" which the credit card processing fee is one of those.
The easiest way to do this in your case is to offer the cash discount option. Price your product to include the fee and if someone pays cash/check they would get say a 3.5% discount etc. This is the only legal way to do it quickly in most states. Laws do differ in certain places and credit card surcharges are illegal

The one thing to note is:
"Note: It is your responsibility to meet all legal and card network requirements and you must first notify both Visa and MasterCard."
So before you can add that charge, you have to do the legwork. It is in fact illegal in some places to charge a credit card surcharge.
