I hired a new employee and cannot seem to figure out how to view our appointments on the same calendar so we don't double book our clients. There is only one room to work out of.

In order to prevent double-booking for the room, you could utilize the resource feature in Square Appointments. In this scenario, the "resource" would be the room needed for the appointment.
With resource booking, you can create resources — like rooms, stations, equipment, or chairs — and assign them to your services that require them. When those services are booked, the resources are automatically booked at the same time so that you don’t get doubled booked when a resource is unavailable. You can learn more about this feature here.
As the account owner, you can view the full calendar for all of your employees within the Square Appointments app or on your Square Dashboard. If you'd like to grant your employees access to viewing and editing the appointments of other staff members, you may need to edit their current assigned Permissions to allow this. You can review all the permissions related to Appointments in the screenshot below:
