I have one employee who makes a flat fee a week then I have 1 that is hourly. How do i set this up? Im so confused on the payroll setup.

You should be able to set up the hourly employee, by setting the "Job & Compensation" for the employee, similarly to this below;
For the "flat rate" employee, you should be able to set the "salary" to the weekly fee multiplied by 52. Square will then calculate that based on your payroll process (weekly, bi-weekly, etc..). For example, I would be paying $923.07/week to the person below, which equals $48,000/year. Do your math accordingly for that employee you pay the flat rate to.
