I am new and trying to set up employees. I have added all of their info and permissions and sent invitations but when they try to create an account it just says "unknown error occurred"
It can be a few things...the most common is that their email address that they have given you has been used before with Square. They will need a new email address to move forward. The next issue...it can actually be a bug on Square side. Contact customer support and explain the issue...they can connect to your dashboard and see if its a looked over mistake or submit a ticket for additional help.
