I create custom items that sometimes have a processing time of 1-2 months, especially around peak season
is there a way to show that to customers? It looks like I can go up to 20 days under fullfillmrnt time, but does the customer see that at checkout? I also see you can upgrade and get a preorder feature if needed. But is there a free way to do this? Do I have to follow the fulfillment time on the shipping profile?

edit: forgot to mention I sell custom stuffed animals, typically they pay the full amount upfront and then I make the item

We really don't have enough information as to how you plan to sell or what kind of items. For example, you could create just an informational type web site showing your items and what your policy is - then the customer decides what they want - you send them an invoice for a deposit. Once complete, you bill for the balance and then ship or arrange delivery. I'm sure you will get some other suggestions once people have more details.
