From your Square Online Overview > Website > Edit Site, you can add a new blank page and named it "Policy".
On this page, you can text and image section where you can type out your policies.
Once that's done, click into your Footer > Navigation > Customise Navigation. You can either add a new navigation link or edit your existing link (the pencil icon) and link it to a Standard page. It'll give you a dropdown and you can select the policies page you just created.
If you'd like your store policies (shipping & return) to appear on each item page (they'll be shown under your item's description), you can also add these under Settings > Checkout > Edit store policies.
