Sometimes, customers that we are trying to help through checkout see a different version of the checkout screen than we do. Currently, I see the first image when I go to checkout, but for one week in February I saw and made this quick-guide for checkout. Why do some customers see the first image and some see the second?

I feel your pain here. I have seen the screens change pretty frequently myself.
The main reason is that the Online environment is a living, breathing thing right now. The development team is doing an amazing job pushing out tweaks based on the feedback of all us merchants. It's been tough to keep up on it, that's for sure, but do know it's all for the best.
Keep an eye on the Product Updates section of the community -- hit the Subscribe button to get alerted to new updates. The team here (especially @Tom and @PeteyD ) have been doing a great job of communicating the new tricks and treats for us.
