Is it possible to download a report to show all our customer's custom fields from Checkout Link? 

We would like to view all our customer's answers in one place instead of clicking into each order detail.

If not, is that on the horizon?

Right now, a report like that would be a Feature Request for your checkout links. I would be happy to get this over to our Product Team, so they can take a look.
