Woocommerce inventory sync - ongoing issues

We have been using Square POS with our Woocommerce website for a little over a year - the systems have been synced this whole time. Every few months we find a product in our system with wildly out of whack inventory. 

 

It appears that for some reason a product will sell via square multiple times without updating in Woocommerce. Then when it sells online via Woo we go in and realize the inventory issue and have to refund etc...

 

In narrowing down what is happening we know:

- Inventory in square is updating when there is an online sale, we have never had a woocommerce sale cause this issue

- when we find one of these issues and go in and manually "fetch stock" in woocommerce it does so and updates, so the link is there (SKUs are correct etc...)

 

The last time this happened Woocommerce inventory hadn't updated since December 21st and it was caught February 5th - so over a month, with updates every hour every day, and at least 10 square transactions where this item was sold and not a single one of those sales triggered the inventory in Woocommerce to update. 

 

We have been told by our website manager that in the past this was a "memory" issue but are now on a dedicated server and, again, updates happen hourly. Why isn't the sync "catching up" after the fact? 

 

Anyone have any light to shed on this?
