Why no variable tax rates?

My business has to invoice customers all day from different tax jurisdictions. The current system for changing tax rates makes it impossible. Why can't I simply type in a tax percentage like every other POS out there? This is a major disappointment, and will probably be the reason we will have to leave square.

What other Transaction Processing Services allow you to simply type in a Tax Percentage change ?? 

We have used several services and have had to setup the Tax Rates ahead of time.  Note, Square is one of them.  If you can recommend a better Provider, perhaps others here will consider your recommendations.  We have used PayPal, Square and many other services / providers and the rule for garbage in is garbage out is quite consistence.  So if you have a Transaction Processing Service that make this a no brainier - please consider sharing with the Community.
