What exactly are you meaning when you say option button? Do you mean Variation? So if you’re on the Square Register and want to add an item you go to more at the bottom right of the screen and then select items. Should see a big bar that says create item. Hit that and the create item screen opens. Fill in the information and right under categories you will see options. You can hit the add options button in order to set options for things like sizes etc. under that you will see price and inventory. Then Stock. Right below stock you will see Create Variation. So for example you are adding an item say Men’s Tee Shirt. Options would be for the different sizes, variations would be for different colors or styles. Hopefully that information helps you out
