I think I really messed up. I had an order for 50 $10 plastic gift cards to my coffee house to be given as corporate gifts. I loaded each of them and saved them to a ticket. The bill was paid by the company via invoice. These are still sitting on the saved ticket, which remains unpaid through POS, so I'm afraid they are not activated. How do I make sure they are activated and fix what I think I did? Thanks!

I haven't actually been able to pay for gift cards using an invoice - it doesn't allow me to create an invoice for an order that has a gift card on it.

If you did not complete the sale on the open ticket the gift cards were saved to then the gift cards have not been activated.
Since you have already collected the payment using an invoice, to fix the mistake process the transaction on the original open ticket. Then apply a 100% discount. That way a payment is not needed to complete the sale.
