I participate in Farmers Markets where one payment option is prepaid tokens instead of cash or cards. Does anyone have experience accounting for such thing when taking payments on a Square Terminal? Do you call it โotherโ payments or something else

Yes, I would suggest using the "Other" payment type, or, you can choose "other gift card or certificate". Here's a support article with some more information on using different payment types in Square. If it would be helpful, you can also add a note to the sale during checkout to mention the customer paid with their tokens.
