I'm trying to find an easy way to monitor the numbers of new subscribers and unsubscribes to our marketing newsletter. We use the Square signup link.
Any ideas on how to best report on this?

When you export your Customer Directory, you will see your customers subscribed status and their first/last visit date. However, in the interests of protecting customer privacy, the date that a customer subscribed or unsubscribed is not shared.
It might be worth looking at some of the integrations on the App Marketplace for a 3rd party solution that focuses on email marketing and automation. MailChimp for example, seems to have quite a lot of options available in terms of reporting.
The integration does sync real-time data from your Square point of sale and online store, but it may be best to reach out to them directly to see if they can assist with what you're hoping to achieve.
