Is there a way of not have them choose shipping or pick up until they are checking out?

Currently customers have to choose to pick up or shipping and once that's done they won't see the items that aren't registered for both, we're getting some customers selecting the wrong option and then finding it hard to change it to the other option.

 

It would be better if they could go through the process and then at the check out or cart display have a "warning or notice" showing pick up only or shipping only or both.

 

Is there any way of doing this?

Having customers select pick-up, or delivery at the start is by design so customers avoid disappointment. If the item they've selected isn't available for the delivery method, or at the locations they've chosen, it won't be shown. 

 

Customers can edit their delivery method with one tap in the checkout screen by selecting edit:

I would also like the option to only display shipping options in the checkout. We've had a few cases where customers have been confused when selecting shipping or pickup on the product page, and then can't edit it on the checkout. 

A site-wide policy to show shipping options on either the product page or checkout would be fantastic.
