I'm so sorry to bother you all with this, but... what does switching location have to do with the numbers in your stock? If I switch location to be ready to use their sales tax... why would that mean I'm sold out of stock? This is so bizarre?

I may be a meathead. Maybe?
I fixed this by going into the Square Terminal > hamburger > Items > All Items, selecting every individual item, clicking 'Stock on Hand' (which was erroneously reporting '0') and setting Stock received to the correct number.
So it's resolved, but, omgosh, set your sales tax location up first.

Welcome to the Square community. When changing Locations and if needed different Taxes. From a computer goto your Square Dashboard - Items then select the Items that are for sale in different Locations. And you can also select Available in Future Locations as well. Screen shot below:
